					<description><![CDATA[My husband has achieved remission from a case of sudden onset UC by following the Specific Carboydrate Diet with two modifications for just over two years now.  During the first 8 months we added no rice or bread and kept meat usage low as well as sweets even though honey is permissible, the only flours are high fat nut flours for the treats which makes for a very high fat diet).  Within two months of the diet he was down from 4 pills a day of Mesalamine 1.2 GM to two.  He has been symptom free for almost two years and his last colon test showed normal cells.  His doctor wants him to stay on two pills a day for life even though he is in remission because if the disease acts up it will be harder to control.  The diet was very difficult to stay on without adding back some carbs at eight months other than what you get from fruits and vegetables.  I went on it with him and lost so much weight I could not stay on it.  The same for him.  So I added back long fermented homemade no knead sourdough bread (2-3 slices per day ) and short grain sushi rice and medium grain basmati (1/2 to 3/4 cup per day or every other day).  We still do two days per week off of either of those carbs.  This is an expensive diet but it works for him and so we make the financial sacrifice.  He is a tall, big man and I am average size and both are in the very good range for our weight. and middle aged.  For me the diet has helped me not have middle age spread and the older age aches and pains  that were coming about have left me andI  rarely am ill even though around two young grandchildren who catch the usual childhood colds.  The hardest part for both of us was giving up sweets and sweet potatoes and fried potatoes!  We are okay with that now because the health rewards are so great we don&#039;t want to compromise those for something our body gets harmed by rather than enhanced by.  ALSO, I make a weekly batch of 24 hour yogurt for our breakfast in my Instant Pot.  Works like a charm and is highly nutritious and I make salad dressing out of it as well as frozen strawberry/banana slushy drinks.  Our Western Set is horrific and one really comes to terms with that when you go on a diet such as the one we have been on.  Travel was a real challenge but we have conquered that as well by bringing our own foods.  All in all it is working well and I wanted to share and encourage those going through this dreadful and scary disease.]]></description>

					<description><![CDATA[I&#039;m trying to figure out how to help my 17 year old that was just diagnosed with UC.  He is currently hospitalized to try to control his symptoms.  He is on a low residue diet but is still experiencing frequent bloody stools.  Since I have so much free time here at the hospital I&#039;m trying to to research what I should expect his diet to look like once he can go home.  Like the poster above, I&#039;m finding a lot of contradictory information. please point me in the right direction.]]></description>
