I'm not surprised. Research finds that celery SEED is a mild diuretic (University of Maryland Medical Center), but that's not celery stalk. An extract of a phytochemical found in celery can lower blood pressure a bit, but that is an extreme concentration, so perhaps eating 10 stalks a day might be beneficial. A Chinese American ate 4 stalks of celery each day and got some reduction of blood pressure. This sent the Traditional Chinese Medicine doctors on the celery path. Proper research on eating celery stalks to reduce blood pressure do not exist. I tried 4 stalks per day, but got no benefit.

Too much sodium is bad. Too little is also bad. The average American consumes too much, so cut out the salt on all other foods, and then the sodium in some fermented foods won't be too much.

Hi Penny, fermented food aren't necessarily high in salt. Kefir milk, for eg, doesn't have any salt, just add kefir grains to milk. Pickling things with salt may be an issue for someone with high blood pressure but there are many other ways to eat fermented foods, for eg yoghurt.

I've just been listening to a programme about fermentation. I find it difficult to understand how fermented foods are good for people with high blood pressure, even though salt is the most important factor when foods are being fermented. The advice given to patients with high blood pressure is to cut right down on the consumption of sodium. Can anyone explain, please?
